Flavoured Green Tea

When assessing green tea, Chinese tea masters look at the ‘four characters’ of the tea: colour, fragrance, taste and shape. For the best teas, these characteristics are referred to as ‘si mei’ or the four beauties. The same basic principles are used by Newby’s tea tasters when evaluating their best teas.
